This filleting knife features a forged Damascus steel blade with a dual-core structure, totaling 110 layers. The internal core combines 10Cr15CoMoV and 9Cr18MoV, creating a synergy of hardness, edge retention, and corrosion resistance. Each outer layer of 9Cr18MoV provides flexibility and durability, while the 10Cr15CoMoV core ensures high toughness and long-lasting sharpness. The hybrid forging process reveals a natural Damascus pattern with no visible core, merging aesthetics with functionality. After lamination, the blade undergoes vacuum heat treatment followed by cryogenic cooling, achieving a hardness of 60 ± 2 HRC and maximizing wear resistance. The edge is sharpened at 15° ± 1° per side, allowing precise cuts through meat and cartilage.
