The 7-inch Santoku knife features an advanced powdered Damascus steel structure, composed of 73 layers, with a central core in 14Cr14MoVNb (S35VN) steel, clad with symmetrical layers of SUS410 stainless steel. The powdered steel core provides high hardness (62–64 HRC), exceptional edge retention, and superior wear resistance. Alloying elements such as molybdenum, vanadium, and niobium enhance structural stability, thermal resistance, and corrosion protection.

The handle is crafted from natural olive wood, a dense and stable material that ensures high resistance to moisture and long-lasting durability.
