This 7-inch Santoku knife is forged with a 10Cr15CoMoV steel core — a premium alloy with high carbon content (0.95%–1.05%) and cobalt addition, which refines the metal grain and enhances hardness. The core is encased in 66 symmetrical layers of 316L stainless steel and special martensitic steel, resulting in a total of 67 layers with a unique Damascus pattern. This structure ensures superior corrosion resistance, exceptional edge retention, and outstanding durability. Precision heat treatment stabilises the hardness at 60±2 HRC, making this knife a long-lasting ally in the kitchen. The combination of 316L and martensitic steel protects the core while reducing friction during cutting. The blade is hand-polished to a mirror finish, enhancing its shine and adding extra rust protection. The micarta handle offers moisture resistance, a secure grip, and a refined aesthetic touch.
