Japanese Chef Knife in AUS-10 Damascus Steel with Black Walnut Handle
The blade features a core of AUS-10 steel, with high carbon content and alloying elements (Cr, Mo, V) to ensure wear resistance and edge retention, tempered to 60 ± 2 HRC.
Over the core, 33 layers of SUS430 stainless steel are welded on each side, creating the Damascus pattern while providing increased corrosion resistance and impact ductility. AUS-10 allows long-lasting sharpening and precise cuts, while the SUS430 protects the edge and simplifies maintenance. The transition between core and cladding is optimized to distribute cutting stresses, preventing warping.
With a spine thickness of 2.6 mm, the blade balances rigidity and lightness, supporting agile kitchen maneuvers. The cutting angle is set at 15° per side, ideal for thin slicing and carving. Selective polishing enhances the contrast between layers, offering technical aesthetics without compromising performance. Each fold of the Damascus is carefully controlled in traditional forging to ensure structural uniformity, resulting in a blade that combines durability, precision, and easy maintenance.
Handle Material
The handle is made of stabilized American walnut, ergonomically shaped for comfort and impact absorption. A synthetic bone inlay reinforces critical areas, enhancing moisture resistance and providing a secure grip even during intensive use.
