This Chef Knife is a full-size kitchen tool designed for controlled, repetitive cutting tasks in both professional and advanced home environments. Its geometry prioritises stability, predictable edge behaviour, and balanced handling rather than decorative excess.
Engineering & Materials
The blade is constructed around a 10Cr15CoMoV stainless-steel core, an alloy positioned in the entry-premium segment for its balanced combination of hardness, corrosion resistance, and edge retention. The core is clad with 67 layers of stainless Damascus steel, forming a functional laminate structure that enhances lateral stability and protects the cutting edge from environmental exposure.
Heat treatment is controlled to achieve a working hardness of 60–62 HRC, ensuring consistent cutting performance while maintaining serviceability and ease of resharpening. The blade is finished with a tapered profile and refined grind, reducing cutting resistance and improving food separation during use.
Process & Finish
After forging and grinding, the blade undergoes precision heat treatment followed by surface finishing to reveal the Damascus pattern through controlled etching. This process is strictly functional, exposing the layered structure without altering edge geometry or compromising steel integrity.
The cutting edge is set at 15° per side, providing a clean, stable edge suitable for vegetables, proteins, and general kitchen preparation.
