Chef’s Knife — 67-Layer Damascus with 10Cr15CoMoV Core
This chef’s knife is designed as a core kitchen tool for consistent daily preparation. Its proportions and balanced geometry support controlled slicing, chopping, and fine work across a wide range of ingredients, making it suitable for advanced home kitchens and professional environments that value reliability over spectacle.
The construction focuses on material stability, corrosion resistance, and predictable cutting behaviour — fundamentals expected from an entry premium chef’s knife.
Engineering and Materials
At the centre of the blade is a 10Cr15CoMoV stainless steel core, heat treated to a hardness of 60 ±2 HRC. This alloy is widely used in premium kitchen cutlery for its balanced combination of edge retention, corrosion resistance, and ease of maintenance.
The core is supported by 66 layers of stainless steel, forming a 67-layer Damascus construction. These outer layers provide structural reinforcement and corrosion protection while stabilising the cutting core during extended use. The Damascus pattern reflects the laminated build and serves a functional surface finish rather than decorative intent.
With a blade thickness of 2.5 mm, the knife maintains rigidity and stability without compromising control during standard kitchen tasks.
Manufacturing and Process
The blade undergoes controlled heat treatment to achieve uniform hardness and dimensional stability. Final grinding establishes a symmetrical 15° edge angle per side, delivering clean cuts with predictable feedback and straightforward resharpening.
A high-polish surface finish reduces friction during slicing and facilitates cleaning, supporting efficient workflow in regular kitchen use.
Function and Intended Use
This chef’s knife is intended for:
It is engineered as a dependable everyday tool rather than a specialist or collector’s piece.
Handle Construction
The handle is constructed from white ivory G10, a glass-fibre reinforced composite selected for its dimensional stability, moisture resistance, and durability. The material provides a secure, consistent grip and maintains its properties under temperature variation and frequent cleaning.
The handle profile is symmetrical and ambidextrous, supporting controlled handling for extended preparation without unnecessary contouring.
