This 8.3-inch chef’s knife is designed as a precise, balanced tool for daily kitchen preparation. Its geometry supports controlled slicing, chopping, and general prep work across vegetables, boneless proteins, and herbs, with an emphasis on stability and predictable handling.

Engineering and Materials

At the core of the blade is 14Cr14MoVNb stainless powder steel, heat treated to a hardness of approximately 62 ±2 HRC. This powder-metallurgy steel offers improved wear resistance and edge retention compared to conventional stainless alloys, while maintaining controlled toughness suitable for regular kitchen use.

The powder metallurgy process contributes to a refined microstructure with uniform carbide distribution, supporting stable edge formation and repeatable sharpening over time.

The core is clad with 72 layers of stainless steel, forming a 73-layer Damascus construction. These outer layers reinforce structural stability, enhance corrosion resistance, and protect the cutting core during prolonged use. The Damascus pattern reflects the laminated construction and serves as a functional surface finish rather than a performance claim.

Manufacturing and Process

The blade undergoes controlled heat treatment to achieve uniform hardness distribution and dimensional stability. Final grinding establishes a symmetrical 15° edge angle per side, providing a balanced compromise between cutting precision and edge durability.

With a blade thickness of approximately 2.2 mm and a blade width of 55 mm, the knife maintains rigidity while allowing smooth, controlled cutting across a wide range of ingredients. The blade surface is polished to reduce friction and facilitate cleaning during regular use.
