Chef’s Knife 8.5" — 73-Layer Damascus with 14Cr14MoVNb Core
This 8.5-inch chef’s knife is designed as a refined all-purpose tool for precise daily kitchen work. Its geometry and proportions support controlled slicing, chopping, and preparation tasks across vegetables, proteins, and herbs, balancing cutting efficiency with structural stability.
The construction focuses on material performance, durability, and predictable edge behaviour — characteristics expected from a premium advanced kitchen knife.
Engineering and Materials
At the core of the blade is 14Cr14MoVNb stainless powder steel, heat treated to a hardness range of 62–64 HRC. This steel offers improved wear resistance and edge retention compared to conventional stainless alloys, while maintaining controlled toughness suitable for regular kitchen use.
The powder metallurgy process contributes to a finer carbide distribution, supporting stable edge formation and consistent sharpening behaviour over time.
Surrounding the core are 72 layers of stainless steel, forming a 73-layer Damascus construction. These outer layers reinforce structural integrity, enhance corrosion resistance, and protect the cutting core during prolonged use. The Damascus pattern reflects the laminated build and serves as a functional surface finish rather than a purely decorative feature.
Manufacturing and Process
The blade undergoes vacuum heat treatment, followed by controlled sub-zero processing, to stabilise the steel structure and achieve uniform hardness throughout the cutting edge.
Final grinding establishes a symmetrical 15° edge angle per side, optimised for clean cuts and predictable feedback. With a blade thickness of 2.4 mm, the knife maintains rigidity without excessive weight, supporting precise handling in daily preparation.
Function and Intended Use
This chef’s knife is intended for:
It is engineered as a dependable working knife for users who value consistency, cutting accuracy, and ease of maintenance over extreme hardness or collector appeal.
Handle Construction
The handle is crafted from rosewood, selected for its density, dimensional stability, and comfortable tactile response. Its ergonomic profile supports secure handling and balanced control during extended kitchen use.
A reinforced structural pin contributes to long-term durability without introducing unnecessary visual complexity.
