      The blade of this professional chef’s knife is crafted from 67 layers of Damascus steel, symmetrically forged around a 10Cr15CoMoV stainless steel core, a high-performance alloy equivalent to Japanese VG10. The core is enriched with carbon, cobalt, molybdenum, and vanadium — elements that ensure edge retention, wear resistance, and corrosion stability. Heat treatment under vacuum conditions achieves a hardness of 60–62 HRC, the ideal balance between sharpness and durability.

      The outer layers in 316L stainless steel protect the core, providing enhanced oxidation resistance, structural stability, and a refined finish. Each blade is hand-sharpened at a 15° angle per side, ensuring precision cuts with minimal resistance.

      The handle is made from figured sycamore wood, a noble material of moderate density, well-balanced and resistant to humidity changes. A mosaic brass rivet ensures reliable mechanical fixation while adding aesthetic refinement. The result is ergonomics, control, and comfort, perfectly suited for prolonged professional use.
