Chef Knife | 10Cr15CoMoV Stainless Steel | ~60 HRC | Everyday Kitchen Preparation
The FireForge Chef Knife 215 mm is designed as a balanced kitchen tool for consistent daily food preparation. A 10Cr15CoMoV stainless steel core hardened to approximately 60 HRC provides corrosion resistance, stable edge behaviour and predictable sharpening performance.
Engineering and Materials
The cutting core is manufactured from 10Cr15CoMoV stainless steel, an alloy containing chromium, molybdenum and vanadium for corrosion resistance and stable carbide formation. This composition supports controlled cutting behaviour during repeated kitchen use.
The blade is clad with laminated stainless outer layers forming a Damascus surface pattern.
Blade Construction
The blade follows a laminated Damascus architecture in which the hardened core steel is enclosed between multiple stainless outer layers. These layers improve corrosion resistance and structural stability while the cutting behaviour remains defined by the core steel.
Blade Geometry
The blade length of 215 mm provides balanced reach for general kitchen preparation. A spine thickness of approximately 2.2 mm and a symmetrical edge angle of about 15° per side support slicing, push cutting and moderate rocking techniques.
Handle Engineering
The handle is constructed from treated rosewood, a dense hardwood selected for its stability and moderate moisture resistance. Full tang construction and metal rivets contribute to balanced weight distribution and structural reliability.
Manufacturing Process
Production begins with laminated billet construction in which stainless outer layers are combined with the hardened core steel. The blade then undergoes controlled heat treatment followed by precision grinding and surface etching to reveal the Damascus pattern.
Functional Use
Designed for vegetables, fruits and boneless proteins during everyday kitchen preparation.
Not intended for cutting bone, frozen foods or impact chopping.
Kitchen knife hardness is typically measured using the Rockwell HRC scale. While higher hardness can improve edge retention, steel composition and heat treatment also influence durability and sharpening behaviour.
