Ji Series Paring Knife — 53-Layer Tricolour Copper Damascus Steel | Padauk Burl Handle
This 4-inch Paring Knife is engineered for fine-detail work, offering surgical precision with a compact and perfectly balanced profile. Forged from 53-layer Tricolour Copper Damascus Steel, the blade combines alternating layers of 316L stainless steel, brass, and purple copper, surrounding a high-performance 12Cr18MoV steel core. This multilayer Damascus construction ensures excellent sharpness, corrosion resistance and an intricate, naturally interwoven pattern.
The core steel, treated to 60±2 HRC, delivers outstanding edge retention, while the blade geometry features a 51° profile and a finely honed 15° ± 1° cutting angle per side, ideal for peeling, trimming, decorative cuts and all delicate food-preparation tasks.
For superior ergonomics, the knife includes an integral rounded heel-to-spine transition, reducing pressure on the fingers and improving comfort during extended use. The handle combines Padauk burl wood, cupronickel and black G10, offering stability, moisture resistance and a refined, luxurious aesthetic.
