This 5.5″ utility knife is designed for precise, controlled preparation tasks within the kitchen. Positioned between a chef’s knife and a paring knife, it supports trimming, slicing, and detailed cutting where agility is prioritised over blade length.

Within the Retro Tricolour Series, this model functions as a complementary tool rather than a primary cutting instrument.

Engineering and Materials

The blade is built around a 12Cr18MoV stainless steel core, selected for stable hardness, corrosion resistance and predictable edge retention in domestic and professional kitchens.

Surrounding the core are 36 external layers composed of 316L stainless steel, brass and purple copper, forming a 37-layer tricolour Damascus structure. These materials are selected primarily for visual architecture and corrosion stability rather than performance enhancement.

The blade is heat-treated to approximately 60 ±2 HRC, balancing edge retention with structural resilience.

Manufacturing Process

The layered billet is forged under controlled temperature to achieve metallurgical bonding between dissimilar metals.

Following forging:

• Vacuum heat treatment

• Controlled tempering

• Fine grinding

• Acid etching to reveal tricolour Damascus

• Final hand polishing

The edge is finished at 15° per side.
