Chef Knife 215 mm — SRS13 49-Layer San-Mai | High-Performance PM Platform
This Chef knife is built within FireForge’s high-performance powder metallurgy tier, positioned above the M390 Crown Series and below the ultra-high hardness ZDP189 platform.
It is engineered for professionals and advanced users who require increased edge retention without entering extreme hardness territory.
Engineering and Materials
The blade core is manufactured from SRS13 powder metallurgy stainless steel, selected for:
-
Fine carbide distribution
-
Stable hardness profile
-
Predictable sharpening behaviour
-
Improved wear resistance compared to conventional stainless steels
The core is vacuum heat treated to:
62–64 HRC working hardness
The core is clad with:
48 layers of SUS420J2 stainless steel (24 per side)
Total structural composition:
49-layer san-mai construction
Spine thickness: 2.4 mm
Edge geometry: 15° per side
Surface and Structural Finishing
The blade features a controlled polished finish combined with a hammered (tsuchime) texture.
This surface treatment:
The multilayer pattern is structural, not etched ornamentation.
Functional Performance
With a 215 mm blade and 2.4 mm spine, the knife supports:
Weight: 235 g
Balance: forward-neutral
This knife is designed for sustained daily work, not display.
