Bunka 210 mm — ZDP189 49-Layer San-Mai | Ultra-High Hardness Platform

This Bunka belongs to FireForge’s ultra-high hardness tier, constructed around a ZDP189 powder metallurgy core hardened to 65–67 HRC.

It is engineered for advanced users who prioritise extreme edge retention, high-carbon performance and precision slicing behaviour.

This platform sits structurally above the M390 Crown Series in edge longevity and wear resistance.

Engineering and Materials

The blade core is manufactured from Hitachi ZDP189 powder metallurgy steel, containing approximately:

  • 3% Carbon

  • 20% Chromium

The steel is vacuum heat treated and deep cryogenically stabilised, achieving a working hardness of:

65–67 HRC

This hardness level significantly increases abrasion resistance and edge retention compared to conventional stainless steels.

The core is clad with:

48 layers of SUS420J2 stainless steel (24 per side)

Total structural composition:

49-layer san-mai construction

The outer SUS420J2 layers provide:

  • Controlled flexibility

  • Oxidation buffering

  • Structural reinforcement

  • Natural multilayer surface pattern

Spine thickness: 2.0 mm
Edge geometry: 15° per side

Structural Behaviour

At 65–67 HRC, the blade offers:

  • Extended sharpening intervals

  • High wear resistance

  • Stable cutting geometry

It requires controlled use and is not intended for bone contact, frozen products or impact cutting.

Functional Use

Optimised for:

  • Precision vegetable cutting

  • Fish preparation

  • Boneless meat slicing

  • Fine push-cut and pull-cut techniques

The Bunka profile supports forward cutting control and tip precision.

Handle Architecture

  • High-density black resin body

  • Internal phosphor bronze reinforcement

  • White brass ferrules

  • Octagonal Japanese geometry

  • Ambidextrous configuration

The structure prioritises moisture resistance and dimensional stability.
