Technical Description
This 300mm Sakimaru knife is crafted for traditional Japanese sashimi work, delivering long, uninterrupted cuts with exceptional edge stability. The blade is forged from monosteel 10Cr15CoMoV, a high-carbon stainless steel known for its fine carbide distribution, consistent hardness of approximately 60±2 HRC, and excellent retention of a keen single-bevel edge. The spine is gradually thinned to improve balance, while the concave ura grinding reduces drag and prevents food adhesion during delicate slicing. The handle combines natural olive wood, ebony, and white ox-bone composite in an octagonal profile, offering a stable, precise grip. Vacuum heat treatment and deep-freeze refinement ensure structural uniformity and long-term durability.
Materials and Construction
The blade is forged from solid 10Cr15CoMoV steel, selected for its high carbon and chromium content, which enhances hardness, edge retention, and corrosion resistance without brittleness. Traditional ura concave grinding is applied to the reverse face, decreasing surface friction and enabling smooth, controlled sashimi cuts.
The handle features a hybrid construction of olive wood, ebony, and white ox-bone composite, shaped in a classic octagonal style for improved ergonomics and fine hand positioning. Precision finishing ensures a stable grip and balanced weight distribution suitable for extended use.
